Low-Carb Muffins

Ingredients

4 whole eggs
approx 3/4 cup Atkins bake mix
approx 3/4 phsyillium husks
1 tablespoon pure bourbon vanilla
1 tablespoon Stevia powder
mineral water

Directions

Spray some cooking spray in the bottom of a muffin pan.

Use a food processor to mix all the ingredients. The consistency should be a little runnier than say, pancake batter. The phsyillium husks soak up a lot of water, so you may have to add a little more if you take to long get it in the pan.

bake @ 375 for about 30-35 minutes.
