Sophies Summer Salad

Ingredients

8 or 9 slices of bacon
7 Oz. trimmed iceberg lettuce
1 Oz. trimmed green pepper
3/4 Oz. trimmed green onions
2 Oz. trimmed radishes
2 Oz. cucumber with peel
1 Oz. trimmed mushrooms
3 Tblsp. cider vinegar
1 Tsp. Splenda

Directions

Fry the bacon until crisp, saving the pan with the bacon grease for the hot bacon dressing. Weigh all your produce after trimming but before washing, then cut or tear into bite size pieces in a large salad bowl. After the bacon grease has cooled but is still 'clear', add the 3 Tablespoons of vinegar and the Teaspoon of Splenda and stir with a wire whisk, loosening any bits of bacon clinging to the pan. Pour as much of the dressing as you want over the salad and toss.

This salad makes a great side dish or you can cut up some hard boiled eggs, chicken, ham, or other meat and make an entire meal of it. If you add eggs be sure to adjust the carb count to allow 1 extra gram for each large egg added.
