Mock French Toast

Ingredients

1/2 Cup crushed pork rinds
2 eggs
1-2 Tablespoons of cream

1-2 Packs of Splenda (to taste)
A shake or two of cinnamon (to taste)
Butter to fry

Directions

Literally dump rinds in a bowl add the eggs and scramble them in. Let mixture sit a few minutes (it will get good and gloppy) add the cream, Splenda and cinnamon.



Melt butter in frying pan and when good and hot, add the mixture, either making it pancake style or like a big omelot. When golden brown on one side, carefully flip over and cook again till golden.

While hot, serve with more butter and some Splenda sprinkled on top, or with some Low carb pancake syrup or Homemade Low carb whipped cream!
