Filipino Chicken (Manok Adobo)

Ingredients

3 pounds of chicken pieces
1 cup vinegar
2 tbsp soy sauce
3 tsp salt
1 tsp whole black peppercorns
4 bay leaves, crushed
8 cloves of garlic, mashed
4 celery top leaves, chopped

Directions

Rinse chicken and pat dry. Place in shallow pan. Combine all other ingredients; mix well. Pour over chicken. Marinate in refrigerator for 2 to 3 hours. Transfer chicken and marinade to skillet. Simmer until marinade is reduced by half and chicken is tender. The chicken will have a slight pickled and peppered flavor. For a milder flavor, marinate for 2 hours instead of 3.
