Quick Pepper Chicken

Ingredients

2 chicken breast filets, cut into 1/2 inch thick strips
2 scallions sliced
1 tbsp canola oil
1 small red bell pepper cut into strips
tarragon to taste
1/4 tsp ground pepper
1 tbsp lemon juice
2 tbsp white wine

Directions

Rinse chicken and pat dry. Saute with scallions in oil in skillet for 4-6 minutes or until lightly brown. Add remaining ingredients. Cook covered, over low heat for 6 to 8 minutes or until peppers are tender.
