The Infamous Mock Danish

Ingredients

2 Eggs
2 ozs Cream Cheese
Tablespoon of heavy cream
2 packets of Splenda
dash of salt
1 teaspoon of vanilla extract
Butter for frying

Directions

Soften cream cheese, scramble eggs and add and mix cream cheese into it, add all other ingredients except the butter and mix well. Heat up a frying pan with the butter and pour mixture in pan. You can try to make it pancake style but mine usually comes out more like scrambled eggs. Cook until it starts to brown and is thoroughly dry. Enjoy!

Additional Information

Can be topped with a no carb SF syrup such as rasberry or another fruit flavor or some homemade whipped cream.

Serve with sour cream. When I made this I found it to be more like a Blintz than a danish. Its simply delicious! Its great for breakfast or a light supper.
