Easy Low Carb Coconut Custard Pie

Ingredients

2 cups heavy cream
1 cup flaked unsweetened coconut
3/4 Cup granular Splenda
1/2 Cup Atkins bake mix

4 eggs
3 tablespoons Butter - melted
1 teaspoon Vanilla extract
grated Nutmeg

Directions

Heat oven to 325 degrees. Place cream in a blender add all remaining ingredients except nutmeg. Cover, blend at medium speed until well mixed (1-2 minutes)



Pour egg mixture into a greased and floured (use atkins bake mix) 9" pie plate or pan, sprinkle with nutmeg.

Bake for 40 to 50 minutes or until knife inserted in center comes out clean.




Additional Information

As a treat you can add some low glycemic berries, such as rasberries, strawberries, or even some blueberries on top for garnish.
