Ingredients

2 Tbsp bacon drippings
1/4 c onion, finely diced
1 large bunch radiches, trimmed and diced
salt and pepper to taste

1/4 tsp dried thyme
1/2 cup crushed pork rinds
paprika to taste (optional)

Directions

Saute onion in bacon fat until soft, then add radishes. Cook over medium heat until crisp outside and soft inside. (about 8 mins) Add seasonings and crushed pork rinds near end of cooking time. Sprinkle with paprika just before serving.
