Turkey Rouladen

Ingredients

4 turkey cutlets (slices of raw turkey breast)
1 chopped pearl onion
1/4 cup chopped celery
1/2 tsp rosemary
1 tsp butter
1 tablespoon olive oil
1 dried apricot, chopped (optional)
1/4 cup chicken broth
1 tblsp Dijon mustard
wooden toothpicks
1 tsp whipping cream

Directions

Preheat oven to 350

Additional Information

My Mother used to make the traditional german Rouladen with thin strip steak. She rolled it up with a slice of bacon and onion in the middle and cooked them in a covered dutch oven on top the stove.
