MAPLE PUMPKIN PIE

Ingredients

1 recipe Pie Crust (Cheesy)
1/4 cup sugar free maple syrup
1 cup canned solid-pack pumpkin
1 tsp cinnamon
1 tsp ground ginger
1/2 teaspoon salt
1/2 cup heavy cream
4 large eggs/separated

Directions

Preheat oven to 400 degrees.

Arrange crust in pie pan, line edges with foil so they don't burn.

Mix all ingredients except egg whites together. Whip egg whites until they are stiff. Fold into pumkin mixture and pour into pie shell.

Bake for 10 min at 400 degrees. Reduce heat to 350 and bake for an additional 35-45 minutes. Pie will rise a lot while baking but will settle back down while it cools. Cool completely and serve.
