Ingredients

4 tbsp butter
4 oz pkg cream cheese
5 eggs, beaten
1 cup finely ground almonds

1 cup soy protein
1-1/2 tsp baking powder
1/4 cup sharp cheddar cheese, grated
3 slices bacon cooked and chopped
1/2 tsp dry mustard

Directions

Cream butter and cream cheese together. Add eggs a little at a time with a little of the soy powder beating well between additions. Mix in the almonds, cheese, baking powder, bacon and mustard using enough water to make a soft dough. Spoon into 12 hole muffin tins and bake at 350 degrees for 20 to 25 minutes or until golden brown and cooked through.

Leave in the for 5 minutes and then put onto cooling rack.

These keep well covered in the fridge and are great reheated in the microwave.
