Meringue Based Cookies

Ingredients

3 Egg whites

1/2 C Splenda

Add ingredients of your choice such as broken pieces of low carb chocolate, chopped nuts, etc.
1 t Extract vanilla, mint, orange, etc.(or DaVincci syrup of your choice to taste)

1/8 t Cream of tartar

Parchment paper

Directions

Whip egg whites, extract and tartar to soft peaks.



Add Splenda slowly, a little at a time.



Continue to whip the egg whites to stiff peaks.



Fold in the remaining ingredients (nuts, chocolate, etc.)



Drop on parchment paper lined baking sheet by tablespoonfuls.



Bake in 350F oven for 10 - 12 minutes, then turn the oven off, keep the oven door closed for 30 minutes.
