All Purpose Basic Wraps

Ingredients

5 large eggs
2/3 cup cream
1/2 cup low carb bake mix
3 tblsp melted butter or olive oil*

For dessert style wraps, add:
1/2 teaspoon vanilla extract
1/4 cup Splenda

Directions

*For savory crepes, use olive oil. For sweetened, use butter.

Beat together wet ingredients, adding bake mix gradually until all ingredients are combined with no lumps. Allow batter to rest 5 minutes, then stir gently just before cooking.

Heat a non-stick or well-seasoned omelette pan or crepe pan, & spray with a little non-stick cooking spray. Pour about 1/4 cup batter, depending on how big you want your wraps, into the center of your pan. Quickly swirl around in a circular motion until the batter thinly and evenly covers the surface of the pan. Allow the surface of the wrap to become slightly dry,then flip gently with a spatula. allow only a moment longer to cook on the second side. The wraps can be stacked one on top of the other without separating with anything. Serve warm, stuffed with your favorite fillings.

Additional Information

This is one of the most useful and versatile items in any lowcarb dieter's menu. They can be used for so many things that low carb diets lack such as tortillas, pasta, etc. My family even loves these!

I adapted this recipe (which included the sweetener and vanilla and butter,from another low carb site-they are called Barbo's Thins)

For desserts or breakfast,use the vanilla or other extracts such as maple, plus sweetener and serve with low carb syrups and whipped cream, or any of your favorite fillings.

For savory dishes such as enchiladas, tacos, sandwich wraps, cannelloni shells, pizza rolls, etc., dry seasonings may be added to the basic unsweetened batter such as herbs, spices, cheeses, garlic, etc. for a great tasting wrap for your favorite fillings.

Cool completely to store like tortillas in the fridge, and use them as needed! I haven't tried freezing them, but I feel they would freeze well. They are great to take along for a bag lunch, and look more elegant in the lunchroom than your average low carb fare! Simply microwave for a few seconds and enjoy.
