Hollandaise Sauce

Ingredients

1/2 C Butter

Yolks of 3 eggs

Juice of 1/2 lemon
1 t Salt

1/4 t Pepper

1/2 C Boiling water

Directions

Beat butter to a creamy consistency with a spoon.



Add the egg yolks one at a time and beat well after each addition.



Add the lemon juice, salt and pepper.



About 5 minutes before serving add the boiling water, a little at a time, stirring well.



Place the bowl in top of double boiler and stir rapidly until the sauce thickens like a custard consistency.
