Andouille Sausage Jambalaya

Ingredients

3 lbs Andouille sausage sliced, (may use smoked sausage if not available)

2 Green peppers, cut into chunks

2 Onions, cut into chunks

6 Ribs celery, cut into thick slices

3 16 oz Canned tomatoes


2 T Dried thyme

Salt, to taste

Cayenne pepper, to taste

Tabasco sauce, to taste



Directions

Cut up all ingredients and place into your crock pot. Add spices/tabasco etc. to the tomatoes and pour over the top. Cover the crock pot and cook on high for 5 - 6 hours.
