Chocolate birthday cake

Ingredients

1 1/2c. almond flour or finely ground almonds
1 Tbs. Baking Soda
2 scoops LC chocolate shake mix (or protein powder with 2 TBS baking cocoa)
1/4 c. SF chocolate syrup
3 eggs
1/4 c. oil
1/4 c. half and half or cream
1 tsp. vanilla
Frosting:
6 oz. softened cream cheese
1/4 c. peanut butter
3 TBS. heavy cream

1/2 cup Splenda

Directions

combine all cake ingredients and stir well until combined. Spray loaf pan with non-stick spray. If using cupcake papers use non-stick spray as well on the papers. Bake for 12-15 minutes or until dry to the touch. Make frosting and spread on cooled cupcakes.

Additional Information

You can also spread cupcakes with whipped cream. Add a few drops of food coloring to the whipped cream for a festive look.

If you do not have the SF syrup or the shake mix, experiment with bakers cocoa. It will add a few carbs but not many for the whole batch.
