Lime Pie

Ingredients

1 Envelope Knox Unflavored gelatine
1/2 cup Splenda
1 cup boiling water

2 (8oz) packages of cream cheese 2/3 cups lime juice
1 cup heavy cream
green food coloring

Directions

1. Beat heavy cream until is consistency of whipped cream. Set aside.

2 Mix gelatine and Splenda in small bowl; add boiling water, stir until dissolved.

3. Beat cream cheese and lime juice until smooth, add a few drops green food coloring. Slowly add gelatine mixture to cream cheese, beat until smooth.

4. Add whipped cream, stir until mixed.

5. Pour into cheesecake spring form or pie pan.

6. Refrigerate until firm, about 3 hours.

Additional Information

Would like to try with a nut crust. Lime juice can be adjusted for tartness
