Ingredients

16 oz container of Ricotta Cheese
1-2 eggs
1 Tablespoon chopped garlic

8 oz package of Mozzeralla, grated
1/8 teaspoon white pepper
1 teaspoon of fresh parsley or 1/2 Teaspoon dried

Directions

using a yogurt cheese basket, drain out the ricotta overnite, (or use a papertowel line sieve or colander to do this.

Once drained mix all ingredients together. Use mixture as a stuffing, for chicken or for any sort of meat that have a slit cut into it and stuffed. Make sure to seal with toothpicks to prevent runout.

Another thought is to take tablespoons of this mixture and to fry it up in a skillet using butter or olive oil and making savory cheese pancakes with them.
