Bacon & Cheese Muffins

Ingredients

3 Eggs

3 T Sour cream

1/2 C Soy flour

1 Pinch onion powder

2 t Baking powder


3 T Heavy cream

8 ozs White cheddar cheese

10 Slices Bacon, cooked crisp and crumbled

2 T Water

Directions

Separate eggs.



Beat egg whites until stiff.



Separate the cheese into to 4 oz piles.



Mix together all other ingredients. Add 4 ozs of the cheese.



Fold egg whites into the other mixture and fill 8 Pam sprayed muffin tins.



Bake at 350 F till golden brown. Remove from oven and top with the reserved 4 ozs of cheddar cheese.


Additional Information

Garnish with fresh herbs, crumbled bacon, more cheese.
