Faux Graham Cracker Crust

Ingredients

1/2 cup cold butter
1/2 cup Atkins Bake Mix
1 cup ground almonds
1/4 tsp baking powder
1/2 cup Splenda
pinch of salt

Directions

Cut butter into baking mix until it resembles corn meal, add all other ingredients. Press into a 9" pie shell and bake at 400 degrees F. for about 10-15 minutes. The crust should just be turning brown when you take it out. Let cool before filling.

Additional Information

Another variation to this recipe is to press it out flat on a cookie sheet and put pecans and brown sugar twin on it. It comes out like pecan sandies.

This can be used for all kinds of fillings. But one that I really like is fake banana cream pie. I use a tub of cool whip (heavy cream brand has less carbs) a half a tsp of banana flavoring (most stores have extracts) and then mix a little dry vanilla sf pudding mix into it. (Makes it stiff)
