Cheesy Artichokes

Ingredients

14 ounce can artichoke hearts (usually 6 to 8 per can)
1/2 cup mayo
1/2 cup shredded mozzarella
1 tablespoon grated Parmesan or Romano
Paprika
chopped parsley

Directions

Thoroughly drain artichokes and pat dry on a paper towel. Cut each into quarters. Arrange artichokes in an 8-inch round baking dish. Combine mayo, mozzarella and hard cheese (Parm or Romano). Spread over artichokes. Sprinkle w/paprika. Bake at 325 for 15 to 18 minutes until edges are brown. Sprinkle with chopped parsley.
