"Potato" Soup

Ingredients

1 bag frozen cauliflower
1 chicken bouillon cube (preferably Knorr)
2 cups water
2 cups cream
2 tbsp. butter
3 slices deluxe American cheese

Directions

Place frozen cauliflower, water, and bouillon in large pot. Bring to a boil and cook until very tender. Add cream and butter. Use stick blender or potato masher to break up cauliflower, leaving a few small pieces. Return to medium heat, add cheese, and simmer for 10 minutes.

Additional Information

The girls at work thought this was potato soup!
