Low Carb Sausage Stuffing

Ingredients

1 sixteen ounce of breakfast sausage, sage or mild flavor.
1/4 cup butter
3 stalks celery, chopped
1 medium onion, chopped
3 four-ounce bags plain or spicy pork rinds. Use food
processor to crush the rinds into the consistency of coarse
bread crumbs.
1/2 cup ruff chopped dried cranberries or one medium apple
(skin on).
tsp. sage
tsp. thyme
Chicken broth

Directions

Crumble, cook and drain sausage. Melt butter on medium heat. Saute celery and onion until soft, season with sage and thyme. In a large mixing bowl, combine all ingredients. Pour broth cup at a time over mixture and toss lightly adding more broth and tossing until moisture level you prefer. Very good stuffed in a turkey or roasting chicken. This recipe can also be baked in a buttered casserole dish for 40 minutes in a 350 oven.
