Mocha Velvet Pie

Ingredients

8" nut crust(nuts, splenda, melted butter pressed into 8" pie pan)

PIE FILLING:

1/2 C Butter

3/4 C Splenda

1 Square unsweetened chocolate melted

1 t Vanilla

1 1/2 T Instant coffee granules

2 Eggs

1/2 C Heavy whipping cream

2 t Unflavored geletin

Directions

Prepare pie shell.



Melt 2 t unflavored geletin and set aside (add last)



Cream butter and gradually add splenda, creaming well after each addition.



Cool melted chocolate, blend into the butter-splenda mixture with instant coffee and vanilla. Add the geletin and blend.



Add eggs, one at a time, beating VERY WELL after each addition (use an electric mixer or you will need to beat each egg addition at least 5 minutes by hand to make the mixture creamy, thick, and fluffy)



Turn into shell and chill 1 - 2 hours.



Just before serving, whip cream and garnish pie with a few coffee beans, mint spring, and a little cocoa sweetened with splenda sprinkled on top.

This can be made without the nut crust also. Just pour batter into a PAM sprayed springform pan and chill.
