Pork Rinds with Basil & Sun-Dried Tomatoes

Ingredients

2 T Olive oil

2 T Melted Butter

2 Garlic cloves, minced

8 Cups Plain pork rinds

1/2 t Popcorn salt for sprinkling to taste


1/4 C Grated Parmesan cheese

6 Sun-dried tomatoes, oil cure, finely chopped

1 T oil from the tomatoes

12 Fresh basil leaves, finely chopped

1/8 t Paprika

Directions

Preheat oven to 300F degrees.



In a saucepan combine olive oil, butter, garlic, sun-dried tomatoes, oil from the tomatoes, basil leaves and paprika. Heat until butter is melted and mixture is warmed.



Place pork rinds into a greased roasting pan. Pour mixture over pork rinds, toss to coat well.



Sprinkle parmesan cheese and popcorn salt over pork rinds and toss again to coat well.



Bake at 300F degrees for 45 minutes until crispy, stirring frequently.
