Ingredients

1 can no sugar added tomato paste -- (6 ounces)
sweetener to taste
1/4 cup water
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon garlic or onion powder
1/8 teaspoon pepper
4 drops tabasco sauce
2 cups low carb baking mix
1/2 cup cold water
1/2 cup shredded cheddar cheese
1/3 cup chopped green pepper
1/3 cup chopped onion
1 cup sliced okra
1 1/4 cups peeled shrimp
1 small tomato -- seeded and chopped
1 cup shredded mozzarella cheese

Directions

Heat oven to 425 degrees. Mix tomato paste, sweetener, 1/4 c water, spices and tabasco sauce. Mix baking mix and water. Roll into 12-inch circle on cookie sheet; pinch edges up to form a 1/2-inch rim. Sprinkle cheddar cheese over crust; spread with pizza sauce. Top with pepper, onion, okra, shrimp and tomato. Sprinkle with mozzarella cheese. Bake until crust is golden brown, 20 to 25 minutes.

Additional Information

This is a great use for low carb baking mix. I prefer the CarbSense brand for this one. I also learned to make cheese bread using this method. Spread a small amount of olive oil over the baking mix and add the cheese and sprinkle with salt and pepper.

For a crisper crust you can oil the pan before putting down the dough.
