Thin and Crispy Pizza Crust

Ingredients

1/3 Cup Vital Wheat Gluten
1/3 Cup Almond Flour
2 Tablespoons Heavy Cream
1/4 cup cold water

Directions

Mix together and pat into a circle on a well-sprayed, shiny cookie sheet. Pat out pretty thin, until it makes about an 11" or 12" circle. Bake in 400 degree oven for about 15-20 minutes, depending on how crispy you like it. Add toppings of choice and bake for about 10 minutes more, or until your cheese is starting to brown. Watch the crust closely so it doesn't burn.

Additional Information

This is really delicious! It is based on Mary's recipe for pizza crust (thanks for the inspiration, Mary!!!), but doesn't have soy in it. I loved the consistency and crispness of Mary's recipe, but I can't handle the soy taste.
