Penne Al Pomodoro, Pollo E Basilico

Ingredients

12 oz dry low carb pasta
1 can (28 oz) Italian Whole Peeled Tomatoes
2 8 oz fresh boneless skinless chicken breasts (grilled with salt and pepper only and sliced diagonally into wedges)
3 Tbsp. extra virgin olive oil
2 tsp. fresh chopped garlic
3 tsp fresh minced basil (keep 1 Tbsp. for garnish)
Salt and pepper to taste

Directions

Prepare pasta according to directions on package. Heat oil in a large saucepan along with the garlic, over medium heat. Once garlic is golden in color (approx. 2 min.) add the tomatoes, basil and season. Using a spoon, mix all the ingredients while breaking up the tomatoes. Let cook 10 to 13 minutes. Place over well drained pasta, and top with chicken wedges. Sprinkle with remaining basil and serve.

Additional Information

I cooked the pasta for about 15 mins, the directions for "al dente" was 10 mins. I used the Bella Vita brand pasta, which is where this recipe came from.
