Ingredients

3 lbs Bratwurst sausages
2 Large Yellow onions, sliced
4 Bottles Beer

Directions

In a large dutch oven over medium high heat, boil sausages, onions, and two beers for about 15 minutes. Cook sausages until all of the beer evaporates and the onions start to carmalize.

Remove sausages and grill on bbq grill until browned on all sides. Using only tongs and not a fork to turn.

Remove sausages and cut into 1 inch pieces.

While the sausages are grilling drain off the grease from the dutch oven. Retain all of the onions and drippings. Return sausages to the dutch oven, use small amounts of beer to de-glaze the pan and sausages, scraping up all the brown bits and mixing well. Use 1 oz of beer at a time.

The beer will foam and lift the brown bits from the bottom of the pan. As the beer reduces and carmelizes add more beer until all beer has been used.

Spoon sausage pieces onto a large warmed serving platter, smother with the onions and glaze. Serve immediately
